Can I modify or delete a single instance of a recurring appointment?

You can delete a single instance of a recurring event but you are unable to modify that single instance.

To delete a single instance go to Collaboration – Calendar
Once in the Calendar, click on the recurring appointment you want to delete.
On the appointment/event screen click on Delete in the top right corner

Make your selection on the popup, the screen will disappear and the event will be removed from your calendar
